Corn Fritter Casserole
Serve this side dish with Barbecue.
Serves 6
3 Tablespoons
Butter or Oil
3 Large Egg Whites
1 8 oz. block fat free cream cheese, softened
1/2 Cup finely chopped onion
1/2
Cup finely chopped red pepper
1 (15oz) can whole kernel Corn, drained
1 (14oz) can cream style corn
1 (8oz) Jiffy
Corn Muffin Mix
1/4 Teaspoon black pepper
Pre-heat oven to 375 degrees F, oil/spray 11" x 7" baking dish
Whisk
oil, egg, cr. cheese until smooth. Add next 4 ingredients, mix well. Add Mix and Pepper until well combined. Pour into prepared
pan.
Bake uncovered, 50 minutes, lightly browned.
